Chef Sage Chen of Blackbird Pop-up and
"Spiritual Advisor" Cameron MacDonald
will be putting on a culinary Pop-up you won't want to miss!
Blackbird Pop Up explores new avenues in the culinary scene by melding Chinese and Italian influences together. As both traditions feature wheat noodles and filled dumplings, Chef Sage saw an opportunity to play with the vehicles and flavors of the two, bridging east and west in a nuanced way. Dishes like the Mapo Tofu Gnocchi or the Deviled Tea Egg pull their flavors from Chinese cooking but are presented in a western style small-plate format, complete with wine and cocktail pairings. There is something to say here about cultural identity too; Sage's perspective as an "American-born Chinese", as well as being a part of the Khmer diaspora, informs their creative process and outlook in the culinary arts. This uneasy balance between the two worlds is a widely shared experience between all who find themselves "not enough" to claim one culture, yet unable to find a home in the other. Blackbird is Chef Sage's answer to the third culture kid conundrum (at least when it comes to the dinner table), and we invite you to embrace the subtle crossroads
where tradition meets innovation on your plate.
Tickets are $110 per person plus Tax and added Gratuity for the Staff.
